Homemade Basil Pesto


Pesto is very easy to make and extremely delicious at the same time. And it can be used for a lot of diverse dishes like salads, pasta, marinade and sauces. It's so worth trying, really. I mean it.


Basil Pesto
(makes about 1 jar or about 1 cup)

150gm cashews
35gm sweet basil
1 clove garlic
1/2 tsp salt
1/2 tsp vinegar
1/2 tsp black pepper (or more if you prefer spicey food)
1/4 cup italian olive oil
1 tsp oregano (optional)
1 tsp sweet majoram (optional) 

Toast nuts, let cool completely. Process until very fine.
Add remaining ingredients, except of olive oil, and process until fine and well combined.
Then add olive oil and mix well using a spoon. Add a bit more olive oil, if you like your pesto to be more creamy. 
Keep in fridge.
