Raspberry Cupcakes With Curd Cheese Frosting

Raspberries go amazingly well with anything milky like yogurt, whipped cream or curd cheese. These cupcakes were the best fruity cupcakes I've ever eaten, very soft and moist. And here comes the recipe...


Raspberry Cupcakes

2 cups white flour
1 tsp baking powder
salt
1 cup sugar
125gm  margarine or butter
2 eggs
50gm whipping cream
1.5 - 2 cups raspberries

Preheat oven to 175degC. Whisk together flour, baking powder and salt. Beat sugar, margarine, eggs and whipping cream until light and fluffy. Beat in the flour mixture until incorporated. Fold in the raspberries and mix well. Fill into 12 prepared muffin cups and bake for about 20-25 minutes until done. 


Curd Cheese Frosting

200gm curd cheese (low-fat)
50gm sour cream /сметана
1/4 cup sugar (or more if desired)

Beat curd cheese, sour cream and sugar until incorporated. Let cool in the fridge. Place on cupcakes as desired. 
Optional: Place some raspberries on top of the frosting.
