It's Chai Time ~ Lemonade Cake With Curd Cheese Topping

This is going to be about the fluffiest cake ever! I've never eaten any cake that was as fluffy as this one. Honestly I'm not the type to eat fluffy cakes or muffins or whatever, I like moist, fruity and creamy cakes, but this one is stilly amazingly delicious! 
I got this recipe from my classmate but I had to change it a bit. And the good thing is that this cake has such an easy recipe. The curd cheese topping is optional, there are so many other toppings that would be suitable such as lemon glaze, dark chocolate ganache or anything else. 


Lemonade Cake

3 cups white flour
4 tsp baking powder
1 cup sugar
1 1/4 cups lemonade
3 eggs
1/2 cups oil


Preheat oven to 180degC. Combine flour and baking powder very well. Mix sugar and lemonade, beat in the eggs, add oil, mix well. Add flour mixture and beat in until incorporated and fluffy and creamy. (There have to be lots of bubbles on top of the batter because of the baking powder and the lemonade.) Pour into big lined baking pan and bake for about 20 minutes. Do not leave the cake too long in the oven otherwise it will get crumbly, dry and flaky. 






Curd Cheese Topping


250gm curd cheese (I used low fat, which is not necessary)
3 tabsp sugar (or more if desired)
3 tabsp lemonade


Beat until creamy and sugar and lemonade are incorporated. Place on the cooled cake. Enjoy :)
