It's Chai Time ~ Another Raisin Cake

It's pretty obvious that I love raisins and any cake that contains raisins. And that's why I bake raisin cakes so often. They are always simple, soft and delicious. Let me say that this cake was one of the very soft and moist raisin cakes. So you really have to give this recipe a try if you love raisins like I do. 



 Raisin Cake

100gm raisins (or more...)
100gm candied orange peel
150gm margarine
150gm sugar
vanilla extract, as desired
250gm curd cheese, low fat
1 egg
350gm white flour
3 tsp baking powder


Optional: Cinnamon, cardamom or other spices. 


Beat margarine with sugar and vanilla until very light and fluffy. Add egg and curd cheese and beat until incorporated. Whisk together flour and baking powder. Add to the curd cheese mixture. Also add raisins, peel (and spices). Mix very well until you have a very thick and soft batter. Let sit for about 30 minutes. 
Preheat oven to 175degC. Butter a longish cake pan or a loaf pan. Fill in dough and smooth out the top. Bake for about 1 hour until done. 
Remove from pan and let cool completely. (Dust with powdered sugar, if desired.) And Enjoy :)
