Raisins are amazing on a cheese cake, right? Right. I needed something yummy for breakfast and since I adore the traditional kazakh запеканка I decided to bake it in small muffin cups. I also added some nuts and raisins as a topping which is also very kazakh, almost every kind of kazakh sweets and cakes contain some dried fruits or nuts, or both. Just try this recipe, it's delicious!
Cheese Cakes with Raisin Topping
500gm sweetened curd cheese
(vanilla flavour, if desired)
a pinch of salt
2 Tabsp sugar
80gm melted margarine or butter
3 Tabsp corn starch
5 Tabsp semolina
1/2 tsp baking powder
raisins, as much as desired
chopped walnuts, as much as desired
Preheat oven to 175degC. Beat the eggs until light. Beat in melted margarine, salt, curd cheese and sugar. Sieve over corn starch, semolina and baking powder. Beat just until incorporated. Fill into 15-16 muffin cups, sprinkle with raisins and chopped walnuts.
Bake for about 20-25 minutes until done. Let cool completely.
