It's Chai Time ~ Запеканка с Изюмом

Я бы ела запеканку каждый день, потому что творог очень люблю, и конечно сметану тоже. Но запеканка с жирным творогом (20%) вкуснее получается, жир всё-таки хороший вкус даёт. 




This is another Запеканка recipe and so far this was the best one I've ever made cause I didn't use the normal low fat cream cheese, but other things that are similar to the cream cheese in Kazakhstan. So my mom told me that the Запеканка was almost like the one she ate when she was a child. 




Запеканка с Изюмом

750gm cream cheese (not low fat, I was using 20%, but 40% would be great too)
200-250gm творог / cottage cheese (I don't know how to call it, maybe grainy?)
6 tabsp polenta / semolina
2 tabsp corn starch
150gm melted margarine
100gm sugar
3 eggs
(optional: vanilla extract, lemon zest, almonds)
+ about 100gm raisins


Preheat oven to 180degC. Grease a baking tray or a large baking pan. Combine melted margarine and sugar. Add cheese and eggs, mix well. Combine corn starch, polenta and add to the cheese mixture. Fill into the baking pan, sprinkle the top with raisins and bake for about 45-50 minutes. Let cool completely.
