It's Chai Time ~ Cranberry Vanilla Cupcakes

Vanilla is just amazing, it goes incredible with anything. I have to admit that I wasn't a huge fan of cranberries, but these cupcakes with dried cranberries are unbelievably delicious. Everybody loved them and everybody asked for the recipe.

Cranberry Vanilla

1 1/4 cups white flour
30gm vanilla corn starch 
2 tsp baking powder
1 cup sugar
1 tabsp vanilla sugar
vanilla flavor/extract
2 eggs
3/4 cup oil
3/4 cup milk

+ 200gm dried cranberries

Preheat oven to 180degC. Sieve together flour, corn starch and baking powder. Combine sugar, vanilla sugar, flavor, eggs, oil and milk. Add flour mixture, whisk until well combined. Fold in cranberries, fill into prepared cups and bake for about 20 minutes. Let cool. Makes 12 cupcakes.

Cream Cheese frosting

100gm cream cheese
200gm low fat curd cheese
about 1/2 cup sugar
(vanilla extract, if desired)

Beat cream cheese, curd cheese and sugar until fluffy. Let cool in the fridge for about 1 hour. Place on the cupcakes. 

Optional: Sprinkle with chocolate or cranberries.
