It's Chai Time ~ Vanilla Poppy Seed Cake

And vanilla again. But this time with delicious poppy seeds. What I like most about poppy seeds is their smell, I absolutely adore the smell of warm poppy seeds - plain or in a cake.
This cake has a soft and fluffy cake bottom with a bit of vanilla flavor and a creamy vanilla pudding filling with poppy seeds, which goes amazing together. 



Vanilla Poppy Seed Cake

Cake bottom:
6 tabsp white flour
1 tsp baking powder
6 tabsp sugar
1 tsp vanilla sugar
vanilla flavor
2 eggs
7 tabsp oil
Preheat oven to 175degC. Grease a round bakin pan. Whisk together sugar, vanilla sugar, flavor, eggs and oil. Sieve over flour and baking powder and whisk it in. Fill into prepared pan and bake for about 15 minutes. Take it out of the pan and let cool completely. 


Pudding Filling:
400 ml milk
30gm vanilla corn starch
4 tabsp sugar
200gm сметана or sour cream (not low fat!)
3 tabsp soft poppy seeds
Combine cornstarch, sugar and 10 tablespoons of milk and whisk well. Pour the remaining milk into a small saucepan and bring to boil. Remove from heat and whisk in the cornstarch mixture. Bring to boil again and whisk well until it's a thick and creamy mixture. Remove from heat and whisk in the сметана or sour cream and the poppy seeds, whisk until well combined. Pour onto the cake bottom, spread evenly and let cool in the fridge for about 1 hour. Enjoy :)



This cake was absolutely delicious. I thought about covering the cooled cake with a chocolate ganache but I didn't. Also I think that adding raspberries to the filling instead of poppy seeds would give the cake a nice flavor and color as well. I'm going to try that out and post it as soon as I can :)
