It's Chai Time ~ Honey Zapekanka (Запеканка с мёдом)

Today it's going to be about one of my favorite traditional cake/sweets. As you may already know it's called Запеканкa. And this time I made a special version with honey. Therefore I was using caucasian honey which we were given by our friends from greece. This sort of honey I was using is really dark red brown and very liquid, almost 'watery' and it has a strong and intensive smell of honey. So the Запеканка turned out to be amazingly delicious. 


Запеканка с мёдом


1kg curd cheese (not low fat!)
200gm cottage cheese
200gm butter or margarine, softened
80gm sugar
2 tabsp vanilla sugar, or more if desired
100gm liquid honey
4 eggs
8 tabsp semolina
2 tabsp baking powder
about 2-3 tabsp vanilla cornstarch


Preheat oven to 180degC. Butter a large baking pan. Beat together butter, sugar and honey. Lightly beat in eggs and curd cheese with cottage cheese until you have a creamy and light mixture. Sieve over semolina, cornstarch and baking powder and lightly beat in until well combined. Pour into prepared baking pan and bake for about 30-45 minutes until done and nicely browned. Let cool and enjoy :)






The original Запеканка is not made of low fat curd cheese and low fat margarine or butter. It should have a soft and quite oily consistency and a very sweet vanilla and honey taste. Honestly, I could eat it all day long.
